About Us

Papas story began almost 75 years ago and about 4,000 miles away when Cristobal, also known as Papa, was born in Alicante, Spain. His mother, Emilia, was one of the first female chefs in Spain and was even a private chef for a prestigious family in Alicante until she was 65 years old.

While she raised her family in a cooking household, out of the three sons, Jose, Paco, and Cristobal, Papa was the only one to pursue a life in the culinary field. He eventually made his way to Connecticut and New York, where he realized that working in the kitchen was his passion.

His favorite quote that his mother used to tell him daily was “Never put off for tomorrow what you can do today,”
